The wine’s creator, Parker-praised winemaker Hervé Sabardeil, approaches Chante-Clair as a patriotic labour of love. He selects the best grapes he can find, from vineyards and growers he knows and trusts (all old friends across the Languedoc region). Then, having fermented each parcel separately, he assembles the parts to create the perfect balance of ripe, lip-smacking fruit and heady aromas.
